Bacon Stuffed Eggplant


Light & filling snack!
Great for Atkins diet!
Ingredients:
  • 1 eggplant
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 6 slices bacon
  • green onion

Preparation:
Cut off the stem of the eggplant,
cut it in half lengthwise.
Take one half of the eggplant,
place 3 slices of bacon in it.
Repeat with second half:


Mix cheese and sour cream:

Place mixture on the top of eggplant to cover. Place on a foil or baking sheet:

Bake at 360 F degrees for 30-40 minutes

or until the top is browned.
