Chicken Meatballs




Ingredients

2 lb ground chicken
2 eggs
1 potato
1 carrot
1 onion
4 tablespoons tomato paste
salt & pepper


Preparation

Grate the potato, carrot and onion with the larger holes of the grater. Add eggs.Mix everything together. Add salt and pepper.


Shape meatballs to desired size and place on a pan. Broil until outside is slightly brown on one side and then turn and broil the other side.



When finished, place meatballs in ovensafe dish.



Add tomato paste. 1 cup of water. Cover with alliminum foil.


Bake at 400 F (205 C) for 45 minutes.
