French Onion Soup


Ingredients
4 yellow onions
4 tablespoons butter
1 beef boullion cube
croutons
cheese
pepper
salt
Preparation
Peel and cut onions


Set heat to low. Melt butter in a large saucepan.
Once butter has melted add onions.
Add salt and pepper.
Cover, do not stir until onions have sweated down for 20 minutes.

Turn heat up.
Stir occasionally until onions are dark mahogany color
and reduced to approximately 1/3 of initial amount.

Add hot water (6 cups). Add chicken broth cube,
1 bay leaf.
Reduce heat and simmer 15 to 20 minutes.


Ladle soup into oven safe bowl.
Place croutons and fold cheese to cover the bowl.


Bake at 425 F (220 C) until cheese is melted
(about 5 minutes)
